Cookie dough icecream sandwiches (paleo/vegan/vegetarian)
I’ve never liked sweets that much, but since I live paleo, there are not many that I can eat anymore. Normally, it’s not a problem – I just don’t eat sweets. But during Christmas, when the whole family eats together, I don’t want to skip dessert. It was my duty beforehand to make the dessert, so fortunately I have my hands on the treats we eat after dinner. And of course, I always look for a paleo dessert and hope that my parents like it. This year, I had a food taster, so I’m pretty sure, they will love my dessert!
The recipe sounds complicated and the result looks spectacular. That’s why I had to try it in advance, just to make sure Christmas won’t end in a mess (we celebrate in my kitchen this year, so that wouldn’t be a good idea). Trust me – it’s pretty easy! If you are German, go on Sweetpaleotreats.de and use the original recipe. Mine is just a little bit different, because I am not a big fan of matcha.
So these are my ingredients:
for the dough
2 cups of almonds, splinted
1/2 cup maple sirup
1/2 cup coconut oil, melted
2 tbsp almond cream
2,5 tsp guarana (instead of matcha – you can also spare both)
20g cocoa nibs
for the avocado icecream
2 avocados
200ml coconut milk
1/4 cup maple sirup
2 tbsp fresh lemon juice
a bit salt
optional: 2,5 tsp matcha or guarana
chocolate topping
40g cacao butter
2 tbsp maple sirup
1 tbsp cocoa powder
First step: the cookie dough
For the cookie dough, put all the ingredients except the cocoa nibs into a blender and blend until smooth. Put it in a bowl, mix it with the cocoa nibs and set aside.
Put a baking sheet into your baking dish (mine is a loaf tin, 30 cm). Take half of the cookie dough and put it on the bottom of your baking dish. Press it flat on the bottom and put it into the fridge.
Second step: avocado icecream
Cut the pulp of the avocado into pieces and blend it together with the coconut milk until smooth.
Put it into a saucepan with the other ingredients and heat carefully. Let it cook for a short time and then simmer for about 20 minutes. Stir permanently. Let the icecream cool down and put it onto the dough in the baking dish. Freeze for an hour.
Then put the second half of the cookie dough on the icecream and freeze for another 30 minutes.
Third step: chocolate topping
If you are happy with just the sandwich, you can skip the last step. But the result looks a lot better, when you put chocolate topping on it. And it’s easy.
Put all ingredients expect the cocoa powder together into a small saucepan and put it into a double boiler. When the chocolate butter is melted, mix it with the cocoa powder and let it cool down a bit. Then spread it over the icecream sandwich.
That’s it! Take the sandwich out of your baking dish and let it thaw in the fridge for about an hour. Then cut it with a preheated knife (hot water will help). Depending on how big you cut your pieces, you’ll get at least 8 out of it. Definetly enough for four people – you can’t eat more than two at a time.
