Who on this planet doesn’t like cake? This was my first one – even non-paleo people loved it.
No grains or dairy.
Not being allowed to eat grains and dairy doesn’t automatically mean you can’t have cake. Especially banana is an allround food I figured out and you can replace grains with nuts easily. So when I was invided to a coffee, I was forced to bring my own cake. I tried baking three times before and failed every single time, but this one luckily was a success!
What to do:
Preheat oven to 200 degrees Celsius. Melt two tbsp of butter (you can also use coconut oil) and take it away from heat. Add 2 tbsp honey (or less – depends on how sweet you want it) and 1 tsp vanilla powder. Then start adding eggs. I used 4 big ones. Mix the ingredients while adding the eggs carefully.
Now, add 50g shredded almonds and 50g coconut flakes while mixing. Also add 2 tbsp of flavour like cinnamon or whatever you want in it. Also add some salt and 1 tsp baking powder. After that, smash three bananas and add them to the rest. After that, add milk of your favour like coconut milk or almond milk. You need about 5 tbsp, just look if the pastry is smooth. Put pastry in form.
Now you can top the cake with whatever you want. walnuts are nice, mixed with honey. I also added cinnamon and raisins. You can use chocolate, fruits, everything. Then put it in the oven for 25-30 minutes. Try with a fork if the cake is ready to eat.

5 tbsp milk (coconut, almond, …)
