Baked salmon with tomatoes
Tasty recipe for a good piece of salmon.
For special days.
This recipe is a little tricky and takes some time. I baked the salmon in the oven together with tomatoes, basil, garlic, salt, pepper and olive oil. First, I put the tomatoes on a piece of tinfoil. Then I cut garlic in pieces and put it on the tomatoes. Add some olive oil and put the salmon on the tomatoes. now add basil, salt and pepper and some more olive oil.
Make parcels of the tinfoil around the salmon – not to tight. Put it in preheated oven (170 degrees Celsius). Use smaller pieces of salmon, that’ll work better.
Be patient.
Now you have to wait until the parcels bloat. When that happens, leave the salmon in the oven for another five minutes. The steam inside of the packages cookes the salmon. Be careful when taking the packages out of the oven and the salmon out of the packages – big heat!
After that, you can put the salmon on the plate and mix the rest (tomatoes, garlic, basil, …) to sauce. You can also put everything on the plate and have it just cooked. This time, I had it with vegetables. But take dishes however you like!
Of course, you can take other spices and herbs, but don’t forget the olive oil! Otherwise you have to scratch the salmon from the tinfoil. I had more sauce than I needed, so I added water and had it as tomato soup the other day.

1 piece of salmon (500g, cut them into stripes)
3 slides of tomato for each stripe of salmon
